Roasted brussel sprouts with bacon
Mashed Sweet Potatoes

Roasted Brussel Sprouts with Bacon
Ingredients:
20 fresh brussel sprouts washed and halved
2 pieces of bacon
4 small shallots thinly sliced
1 1/2 TBS olive oil
Salt and pepper to taste


Pre-heat the oven to 350 degrees. Place the brussel sprouts face down in a baking dish and drizzle with olive oil and a little salt and pepper. Roast for 15-20 minutes. Meanwhile fry the bacon in a fry-pan on a medium-low heat until crispy. Drain on paper towels and the chop. Turn the heat down a little and fry the shallots in the same fry-pan until light brown and caramelized. Place sprouts in a serving bowl and toss with shallots and bacon then serve.


Mashed Sweet Potatoes
Ingredients:
3 Sweet potatoes (you may also use yams)cut into big chunks
Salt and pepper to taste
1/2 stick of butter
1/4 cup of milk


Peel and boil like regular potatoes until a fork passes through them easily. Strain them then place in large bowl. Add remaining ingredients and mash with potato masher then serve.


Shrimp On The Barbie
ingredients:
1 stick of butter melted
1/4 cup olive oil
1/4 cup fresh cilantro
3 TBS fresh lemon juice
3 large cloves of garlic
1 shallot
1 1/2 lbs large shrimp peeled
fresh spinach leaves


Combine first 6 ingredients into a blender or chopper and blend. Put mix into larger bowl and add the shrimp. Marinate at room temp about 1 hour. Prepare BBQ with medium hot coals. Thread the shrimp on skewers. Grill about 2 minutes on each side cooking until shrimp are no longer raw. Place spinach leaves on platter then add the skewers of shrimp on top of the spinach. Serve.


This meal was amazing!!! I love light summer meals like this. Do your kids hate brussel sprouts because they are bitter? My kids loved this! What does not go good with bacon? I loved the shrimp with the spinach. It was a nice twist. Enjoy!
