The Madagascar Recipes

So here is the Menu with recipes for the night I made food from Madagascar a country picked by my eight year old son.


Akoho sy Voanio (chicken in Coconut Milk)
ingredients:
three boneless skinless chicken breast cut into bite sized pieces (your butcher will do this for you)
Juice of one lemon
1 tsp grated lemon rind
Salt and pepper to taste (cayenne or red pepper if you like it bolder)
Enough oil for frying the chicken (about 2 TBS)
2 onions chopped
2 cloves of garlic minced
2 tomatoes chopped
2 tsp ground ginger
1 cup coconut milk


To make:
In a bowl marinate the chicken in the lemon juice, lemon rind, salt and pepper for about an hour.
Heat oil in large pot.
Saute the onion and the garlic for a few minutes.
Add the chicken and continue to cook and stir until the chicken is nearly done. Reduce heat.
Add tomatoes and ginger and stir for a few minutes.
Add coconut milk and simmer over low heat until chicken is fully cooked and sauce is thickened. Stir often. Serve over rice.


To go with this I made a couple of sides.


Lasary Voatabia (Tomato and Scallion Salad)
Ingredients:
1 cup scallions (finely chopped)
2 cups of tomatoes (finely diced)
1 tsp salt
few drops of Tabasco


Stir lightly and chill. Serve approx 1/3 cup per portion.


Banana Fritters
Ingredients:
3 ripe bananas
1/2 cup flour
1/8 cup sugar
1/8 cup water
1/2 tsp nutmeg
1/2 tsp vanilla
oil for frying


Mash bananas. Add flour. In separate bowl mix water, vanilla and sugar to make a syrup. Add syrup and nutmeg to the banana flour mix. Add enough water if you need to to turn it into a pancake consistency. Fry like pancakes in oiled frying pan until golden brown.


This chicken dish was fun to make! Not only that but the taste was amazing! My kids and husband loved it. The salad tasted a bit like salsa but it was yummy and the banana fritters were great too. Please if you make this let me know how it turned out and if you liked it.
